This is important to remember, and make sure you learn from what you did, don’t blame something or someone else, figure out what you have done wrong and take note,and don’t do it again!
Have your mis en place! When it comes to desserts there are certain reactions and emulsions that need to happen to get the desired results. So it’s important to follow the method and not to rush and get to far ahead of yourself.
Working clean is very important, otherwise there is ingredients everywhere, and it’s easy to get lost and miss weigh an ingredient.
